One of the traditional ways to do this was using a Raspberry Pi with a suitable RFM9x module. There are now a variety of boards created for other similar projects such as Meshtastic and TTN
Initially I'm looking at utilising the Heltec Lora 32v3 boards which contain an ESP32-S3 controller with the SX1262 Lora chip

May only be able to run Wifi or BT (not both at the same time)

- Can we add PSRAM (which might allow BT and wifi)
